Cielo Blanco, a 125-seat, vibrant, upbeat restaurant that serves great value, healthy Mexican food, will open in the new Trinity Leeds in March 2013
The name Cielo Blanco, meaning ‘White Sky’ was inspired by the dramatic, curving glass roof that spans the Trinity Leeds shopping and leisure development where the restaurant will reside. White Sky has become a metaphor for the purity and simplicity of the food and drinks that will be available.
Their aim is to provide authentic food and drinks, served by warm and engaging people in a friendly and lively environment. The delectable food offerings will be simple, delicious and nutritious, always fresh and quick to prepare – the embodiment of their strap line ‘Símplemente Méxicano’.
Authentic is the key word here, there will be no room for the bland, greasy, stodge often served up as “TexMex”. Owners, Ged Feltham and Paul Lane’s interest in true Mexican cuisine has been cultivated over several year’s visiting the country, which led to the launch of the award-winning Neon Cactus in 2009.
To ensure the Cielo Blanco menu captures the essence of real Mexicana, they recently took the rest of the team on a fact-finding mission first to Mexico’s culinary capital Oaxaca (pronounced Wahaca), and then travelled around the country where they spent three weeks sampling anything and everything they could. It was food for thought in every sense.
These many trips ensured they returned home with a clear vision of what they wanted: more than just a restaurant, they wanted to offer an experience that was uniquely personal to everyone who came, so that they would tell their friends and return again and again.
Key to all of this is great service. Ged and Paul know you can’t have happy customers without happy staff, which is why they have always put so much emphasis on ensuring their people are well trained and well paid. From the kitchen to the front of house, every one of Cielo Blanco’s employees will be committed to ensuring each and every customer leaves with a little taste of Mexico.
Of course, the food is not Cielo Blanco’s only tempting facet. The bar will be managed by multiple-award winning Nick Fox, who will be bringing his fantastic liquor and beer knowledge plus introducing a non-alcoholic juice bar inspired by Wahacan market drinking. Joining Nick in this well stocked bar will be a team of experienced bartenders, who will always look to accommodate customer requests.
